We had to include a recipe page. You will probably find that many of the dishes are quite similar, mainly due to the common ancestry most of the Caribbean islands share. Antigua was one of the first islands to be featured. We have now completed our feature on Barbados and if you click on the following links you will be taken to the national dishes for Antigua and Barbados.
Of course we will be featuring the national dishes for the other Caribbean islands. Watch this space. If there are any dishes you feel that we should add please let us know.
Barbadian Dish - Ham and Blackeyes in Coconut Milk
Wash and drain Blackeye peas and place them in a pressure cooker along with the garlic, onion, thyme, marjoram, basil, salt, coconut milk and water. Cover and pressure for 25 minutes.Allow the pressure to dissipate then open the cooker and add the ham and pepper sauce. Add a little water if it is too thick.
Simmer for 10 minutes then adjust the seasonings e.g. more herbs or pepper sauce. Simmer for another 10 minutes. Stir in liquid smoke and cook for 1 more minute.
Serve over boiled rice.
